INGREDIENTS

1 cup of nuts of your choice ie: pecans, almonds, macadamia, walnuts

1/4 cup of a mix of sultanas and currents

1/4 cup of coconut flakes

1 cup of a mix of pepitas, sunflower seeds and sesame seeds

2 tablespoons of either maple syrup or honey

1 teaspoon of Cinnamon

2 egg whites, whisked to fully incorporated

METHOD

1. Add chopped nuts, seeds and dried fruit to a bowl.

Mix all ingredients together.

2. Add in maple syrup or honey and egg whites and mix well.

3. Mix in cinnamon.

4. Spread out on oven tray and bake at 180 degrees till nicely toasted. Depending on your oven up to 20 minutes. *

5. Cool and store in an airtight container.

6. Serve with some yogurt of your choice and top with grated apple.

Gluten free, Paleo Muesli

In winter stew the apples instead. Yum!

NOTES

*My oven is very slow so takes a while to cook, continue to check your while its cooking to avoid burning.

*the egg whites creates clumps in the muesli, if you cant have eggs or don’t want clumps then omit the egg whites.
